You have to decide between water based products and oil/solvent based products. The water based products will have less vapors, volatile organic compounds, etc. Oil or solvent based products do have more of the bad stuff but they level better, offer better protection and generally look better. Either way I would go with lots of ventilation and run some extra activated charcoal during and after painting. Some products are designed specifically for marine environments. For example, old fashioned spar varnish, which is used on boats. It is probably(?) safer than many of the urethane or alkyd enamels. The main solvent in spar is usually turpentine made from pine trees. I would remove the doors and hood to another location for painting. If the room gets smelling pretty bad you might have to rethink things or take it slow.

Talk to the sales reps at an actual paint store. The water based finishes are getting better all the time. Maybe they have something they can recommend.
