I've been wanting to add a Flame Hawkfish as my last fish but haven't yet had the nerve to buy one.  Does anyone have a flame hawk successfully with peppermint and cleaner shrimp or coral?  On reading about them it says to monitor (some say with coral, some say with shrimp), I just wonder how strongly they like the taste of shrimp and/or coral!

I'd say safe with coral, but certainly not safe with shrimp.

I too have been considering one of these. But, opinions are all over the place on whether or not they will cause issues. I have been told by Ben at Aquatic Dreams that they should not be a problem with hermits and they shouldn't touch my skunk cleaner shrimp either. I was planning on getting a small one (1.5-2") and I couldn't imagine them hurting my 3-4" cleaner shrimp...but I have not wanted to take the chance.

I wish someone knew more definitively what these guys will bother (in other words, what crustaceans and what corals specifically are most at risk)

They are an awsome fish. Id get one. In fact, I have two. They do not eat larger shrimp such as fire, voral band or cleaners but they will eat hermits and snails. I just buy more snails and keep the fish. They are very entertaining and more than worth loosing a few snails now & then...
I have flying monkeys and I'm not afraid to use them.

Mine has never touched a single thing in my tank. It eats the mysis and Brine that I feed daily, but it teased my cleaner shrimp but the cleaner was bigger then he was so he left it alone.
Hermits and snails? Mine sits on the snail shells that are cleaning the glass. he doesn't bother anything.

i have a flame hawkfish in my tank as well as peppermint shrimp he hasen't ever bothered anything. i would recomend getting one they are alot of fun to watch and have agreat personality.
leap first then look!

i love mine he is one of coolest fish i have. never keep him with shrimp,  but lots of coral and crabs and snails they stand out like crazy  get one even if you have to start a new tankThumbs Up
